Recipe: Almond Chia Breakfast Pudding

Tania Flack, a leading Sydney naturopath and nutritionist, shares one of her sought-after recipes with SPA+CLINIC.

Her easy to make almond chia breakfast pudding is vegan friendly, gluten- and dairy-free. It’s also one of the recipes she recommends in her detox program for optimum hormone health.

“The liver and gut are key to hormonal health,” she says. “Both directly influence how well our body can cope with hormone fluctuations.”

“There are specialised enzyme pathways in the liver that metabolise our hormones. Sluggish liver function means that you’ll be less able to cope with hormone changes.”

“This breakfast treat is a favourite with my clients. Chia seeds are rich in protein, fibre and antioxidants, so they stabilise blood sugar levels and protects the body from free radical damage that contributes to ageing and chronic disease.

“They are also an excellent source of calcium and expand to 17 times their original size with water, so they’ll keep you full and slow down the absorption of carbohydrates.”

Ingredients

2 tbsp chia seeds
1 cup almond meal
1 cup homemade almond milk or coconut water
1 tsp vanilla bean (scrape seeds from pod)
1/4 tsp allspice (less if you prefer your food less spicy)
1 tsp cinnamon powder
1 drop stevia liquid (optional)
1/4 cup mixed berries (blueberries, blackberries, strawberries)
1/4 cup crushed pecans or almonds to garnish

Method

  • Combine all ingredients into a small pot over low-medium heat except berries, crushed almonds/pecans.
  • Once the liquid is absorbed, remove from heat and serve topped with berries and crushed nuts.
  • You may want to add extra almond milk.
