Recipe: Green Eggs With Avocado

Dr Libby Weaver is an internationally acclaimed Australian nutritional biochemist (actor Hugh Jackman describes her as “a one stop shop for wellbeing”) who believes that our energy level, not our weight, is the most important benchmark of overall wellness.

Here she shares her Green Eggs With Avocado:

“Eggs are a dietary mainstay for me and I’m sure many of you would relate to the saying ‘If there is an egg in the house, there is a meal in the house’,” she says.

“Eggs are a source of complete protein, meaning they contain all the essential amino acids necessary in correct proportions to support biological function.

“Eggs and avocado are a match made in breakfast – or brunch, lunch, or dinner! – heaven.

Ingredients

2 tablespoons ghee or olive oil

2 cups (60 g) baby spinach leaves

8 eggs, lightly beaten

2 tablespoons chopped dill, plus extra sprigs, to serve

Sea salt and freshly ground black pepper

2 avocados, cut into large pieces

Finely grated zest and juice of 1 lime

Method

Heat the ghee or olive oil in a large deep frying pan over medium heat, add the spinach and cook for 2 minutes or until just wilted.

Add the egg and sprinkle the dill over the top, then season to taste with salt and pepper.

Cook, stirring gently, until the egg is just beginning to set, then use a spatula to push the set edge into the middle of the pan.

Continue until all the egg is just set. Remove the egg from the pan, fold through the avocado, lime zest and juice, then serve scattered with extra dill sprigs.
